Extra Light roast philosophy

We choose Extra Light roasting first and foremost for ourselves - for those of us behind the roaster who seek cups that are bright, clean and smooth.

Every roast style is a language through which coffee expresses its terroir. With Extra Light, we aim to bring that sense of place into clearer focus. Soil, altitude, climate, variety, and the people who cultivate the coffee all leave their mark, shaping its journey from cherry to bean. Together, these elements create the qualities that make each coffee distinct.

Our approach is therefore simple: roast with enough intention to bring balance and enough restraint to preserve individuality. The result is coffee that reflects where it comes from - not through a predetermined style, but through its own character in the cup.

NIR technology

To bring this roasting philosophy to life, we rely on near-infrared (NIR) technology from Rubasse. By allowing energy to penetrate deeper into the bean, NIR supports a more precise and efficient transfer of heat. This gives us greater control to roast at an Extra Light level while maintaining even development throughout the bean and consistency from batch to batch.

NIR also allows us to roast with lower energy consumption, reducing the electricity required throughout the roasting process. For us, using energy thoughtfully is an essential part of a more sustainable approach to roasting - using only what is needed, and leaving less behind.

Transparency

Transparency is an essential part of how we source coffee. We believe the people, origin, and processes behind each coffee should be visible - from the farm and producer to its variety, altitude, and processing method. By tracing each coffee back to its origin and sharing these details openly, we hope to create a closer connection between those who cultivate coffee and those who enjoy it. We believe the people and communities who cultivate coffee deserve not only to be recognized, but to be seen and respected for the knowledge, care, and dedication behind every harvest.
